Stirfried Beef with Cashews


INGREDIENTS METHOD
  • 400g thinly sliced striploin steak
  • 2 T oil
  • ½ T chopped garlic (about 2 fat cloves)
  • 1 onion, thinly sliced
  • ½ cup roasted cashews
  • 2 T dried chillies
  • 1½ T fish sauce
  • 1T dark soya sauce
  • ¼ t salt
  • 1 fresh red chilli(or red pepper)
  • ½ cup spring onion, sliced into short lengths
  • coriander leaves, chopped


Soak dried chillies in warm water for 20 minutes, slit open, remove seeds and slice.

Fry garlic in heated oil for 30 seconds, add steak and cook two minutes, stirring. Add cashews, dried chillies, onions, fish sauce and soya sauce and salt and cook 3 minutes.

To Serve:

Garnish with spring onion, fresh chilli, seeded and sliced, and coriander leaves.
